34 Weeks!!! Yikes!!!

Well, we have made it to the home stretch. 5 weeks to go. I feel absolutely nervous as can be, but also happy that we have everything we need and I’m confident we are as ready as we are gonna be to meet Miss Brianna.

I have washed all our clothes from Kira and have a TON of clothes and blankets. We have the bassinet/pack n play and today I’ll be cleaning the spot in our room so we can put it up. Kira’s room is straightened and after Thanksgiving I’ll work on getting her things in her room so she can play in there with toys that could be hazardous to Brianna. All I need is bottles and we are ready.

Last doctor appointment everything looked good, so now it is just a relax and wait game. Oh, and I’ll be making a blog post on how I plan to get through the first couple of weeks post-surgery (Hint: food will be a MAJOR part of that post).

Thanksgiving & Traditions

So, we started this month thinking we would be spending Thanksgiving with my mother-in-law and that whole side of the family as usual. Once we started having worse car issues, we realized, this wasn’t going to be the case. Since Kira is on this new diet, I had planned on making a few sides that I could bring for her anyway (and lets just face it, who doesn’t love leftovers while decorating the tree the next day) but I had not planned on making the whole meal.

Gotta love how plans change, so now we are gonna spend the actual day of Thanksgiving at home. I am excited this year because my plan is to make the day super special and full of new traditions.

Thanksgiving morning as a child, I use to watch the parade every year. My plan is to try out a new recipe for crock pot monkey bread for breakfast Thursday morning while we watch the parade. Then have our big meal for lunch before Kira takes her nap. Thanksgiving Menu for us will be:

Ham
Homemade Cornbread & Apple Dressing
Mashed Potatoes & Gravy
Sweet Potatoes
Homemade Green Bean Casserole
Homemade Cranberry Sauce
Rolls (of some type)
Deviled Eggs
and Brownies for Dessert

Some people may think I am Crazy for making so much when it is just the 3 of us, however, leftovers are always yummy, and we will make a separate plate for Kira Thursday evening since we will be spending Saturday at my Father-in-laws and I plan to bring plenty that Kira can eat.

I will give you a quick timeline for how I plan to pull this all off:
Monday: I made Chicken Noodle Soup for dinner, saved about 4 cups of broth for Dressing and Gravy

Tuesday: Make Homemade Cranberry Sauce & Homemade Cornbread for dressing

Wednesday: Make Brownies, Chop all veggies, Make homemade cream soup, Assemble the Green Bean Casserole, Make Biscuit Dough

Thursday: Assemble Crock Pot Monkey Bread & cook, Peel Potatoes, Chop and Boil. Put Ham in Oven, Bake Sweet Potatoes, Cook Green Bean Casserole, Take Ham out of oven, Mash Potatoes, Make Gravy, put Biscuits in oven

This is just my rough timeline, some things I am sure will get moved around, however the plan is our big meal at noon, then naps all around 🙂

Kira’s Diet: A Day (Or 2) Of Cooking!!!

Again I will tell you I am a very ambitious person. When I set out to change all of our eating habits, I also determined I was going to make quite a bit of our full months worth of food in 1 day… YES, you read that right… ONE DAY!!! I know, I’m crazy, and I also know I wasn’t thinking straight when I decided to do this, and I will NEVER again decide to take on such a monumental task in ONE day!!! I had good intentions, I was trying to give myself time to relax, and while it was a GREAT idea, it really needed to be broken down into about 6 or 7 days worth of work.

So enough about the crazy idea, let me tell you just what I did. We got 20 lbs of ground chuck which was all natural and had no dyes added (Yes, in case you didn’t know, some places add dyes to their meat to make it “look” fresher). So I started browning up some of the beef for homemade beef sausage. I also washed and wrapped a 5 lb bag of potatoes and started them baking to make homemade hash browns. I divided chicken into freezer bags for making Chicken Quesadillas and Chicken Sloppy Joes (both will be made in the crock pot and can be added in frozen, so these were easy meals to “prep”).

I finished the browned sausage, and then I started another batch of ground chuck which was seasoned for Tacos, Chili, and Beef Sloppy Joes. Once cooled, I separated the Chili and the Sloppy Joe meat into sandwich sized bags and threw each of those into a bigger freezer bags labeled and had 6 meals worth of meat done. I saved the Taco meat back, and I added a large can of refried beans to the meat, mixed through and then separated into another 4 sandwich baggies and threw those into a freezer bag. I now had 10 meals of COOKED meat ready to go.

It was getting close to lunch time by now, so I started making Pizza Pockets. I doubled the recipe for the dough but not being much of a baker, for got to separate and cover part of it and ended up with dried out dough, and only made about half the Pizza Pockets I intended and ended up throwing away the dried, crumbly dough. I was getting exhausted and I still had a TON of stuff to do.

I finally decided to finish up with the casseroles I could throw together quickly and then finish the rest in the next couple days. It was the best idea yet, and I now realize that when cooking THAT much food, I really need a better game plan, (or at least a more REALISTIC one).

By the time I was done with all my cooking (about 3-4 days total) I had:

2 Chicken Quesadillas
12 Breakfast Cups

I will add some French Toast, Pancakes, Cereal, and eggs into the breakfast rotation, and grilled cheese, bean and cheese quesadillas, and peanut butter and Jelly for lunch and we will be set.

I am very happy I got this done, however I am anxious for next month so that I can plan a bit better and hopefully make things easier on myself going into the holidays AND Brianna’s birth.

Kira’s Diet: Out with the Bad, In with the Good!!!

I know I am behind, and I promise I am gonna try to make these posts informational and quick, and get them out to you as quickly as possible. This is what I spent the day Nov 7th doing. I was cleaning out all the “bad” foods. Now some of you may look at all this and say “really??? Cheerios are bad???”. My answer to that is, Yes, and No. When looking through the basics of the Feingold Diet, one of the things that can cause issues with children who have food sensitivities are certain kinds of preservatives. Look on a box of them sometime and you will see one of these preservatives is used to preserve freshness. So, we gave away a HUGE box (tub) of food, and I also threw away a lot of food we had that was passed it’s date.

When I was done cleaning out everything, I was overwhelmed by just how much food we were putting in our bodies that was really quite bad for us. I have always believed in the “everything in moderation” saying, but when you truly look at how empty my cabinets were once I got rid of all the “bad” stuff, it is scary.

Now I must admit, I may have gone a bit overboard with getting rid of so much, however, it really puts into perspective just how much we were eating that had bad stuff in it.

I didn’t get pics of the shopping trip. However, I did get a grand total of 410.00 that we spent on the “months worth” of food. I however have been to the store twice since the trip and have spent an additional 120.00 in more groceries (some of which was a compromise with the husband, whom has been very good through out this whole experience), some of it was also on fresh produce and milk and things that don’t have as long of a shelf life.

Now, the shopping trips themselves are not the hardest part, the hardest part is all the work, research, and time put into finding healthy and yummy meals to make for the family. Where I use to be able to find a recipe that I wanted to try and just add the ingredients to my shopping list and call it a day, I now have to find recipes that Kira will like AND that she can eat. I spend about 2-3 hours looking through recipes and sales adds before each shopping trip. I also spend an extra 30-45 minutes reading ingredients on product websites. It’s a lot of work, but the difference we have noticed is so astounding, it is definitely worth it.

A Quick Overview!!!

It has been a CRAZY week so far for sure.  I have gotten quite a bit accomplished and am hoping to continue the trend.  This will just be an “overview” post since I still have to upload photos and put together the posts about shopping and cooking as well as some of the things we have been doing with Kira.

So look for a post on the shopping trip, A separate post of the 2-3 days of cooking I did.  And then one on Some of the stuff I have done with Kira lately, as well as a special one on the Advent Calendar I am making for Kira for the Christmas Season this year.

Lots going on and I am Super excited to be able to share it with you 🙂

Confession of a Blogging Housewife: Ambitious Much???

Confession Time!!!  So, for those of you who don’t know me personally, I’ll let you in on a piece of semi-useless information… I am an overly ambitious person.  Now some of you are probably going “we figured that out months ago”.  Well, here comes the confession part.  I must take a minute to say I have to most wonderful, caring, UNDERSTANDING husband in the universe, who, at times (usually when he needs to be) can be a typical “guy”.  He heard all about my ambitious ideas to “radically” change our diet, he listened, he questioned, but he went along.  He followed me to FIVE stores on SATURDAY to get everything I needed so that Sunday I could begin “Operation: Cook Healthier”.  He carried at least 50 bags of groceries up the stairs while I tried to find room for everything (not an easy task in our small kitchen).  Did he complain??? Um, yeah… even I was complaining 🙂 But, none-the-less he went along for the ride.

So, Sunday, well that was a bit of a different story.  After everything we went through to get the groceries and then get them home and in our apartment I was feeling on top of the world.  Overly proud of myself and just “knowing” this was THE step our family needed to go in.  One thing I forgot, to keep in mind the few (and there really aren’t that many) things my husband does not like.  I started off with a bang, but by around noon my 8 month pregnant behind was dragging.  I was starting to get discouraged and then, the “peanut gallery” chimed in with (in MY head) a “Million” criticisms.  Ok, really, there were like 3, but to a hormonal, frustrated pregnant woman it may as well have been 3,000.  He wasn’t criticising ME, he just is not use to “health” food and neither of us enjoy change all that well.

I was still trying to pull my plan all together.  I figured, maybe it will just take some getting use to for everyone.  I was plowing ahead FULL-SPEED… for about 7 minutes.  In the end, my “massive” cooking day was successful. I managed to get 21 meals made, and I have another 17 more to make this week (I’ll be breaking-up the work between 2 or 3 days this time though).

I also am taking a step back and reconsidering our menu.  I have decided to make things I know Nick likes as well, only the healthier version.  I am quite proud of myself for not “giving-up” but rather “taking a break”.  I am learning my limits (day by day) but I am also willing to compromise as long as the main objective (No High Fructose Corn Syrup, or Artificial flavors or colors is how this all got started in the first place) stays the same.  I have yet to break the news to Nick that we will still have “Taco Tuesday” at our house, and that burgers are just fine for a couple of dinners as well.  I’ll have a talk with him later today, as for now, it’s bedtime. Night!!!  

31 Week Update!!!

Yesterday I had an ob appointment.  I must say, I LOVE my ob, she is amazing.  At my last ob appointment she was talking about how I have been measuring ahead of schedule for a few weeks now, and so out of curiosity she ordered an ultrasound to check size.  For those of you who know me, you probably realize that I have a tendency to worry about things that are out of my control and stress over them to a point where it is not healthy.  My ob knows this, and is AWESOME in not worrying me about things that are only “possibilities”.

So I had the ultrasound done first, and was super excited to get to see what was going on in there.  First off, 2 weeks ago, Brianna was breech, and way up high.  First thing the tech informed us was that she is HEAD DOWN!!!!  YAY!!!!  I know it really doesn’t matter since I am having a repeat C-Section anyway, but it is nice to know this baby is trying to cooperate.  After I explained to the tech about how I had been measuring ahead of schedule for a couple weeks, she understood exactly what my Dr wanted and got her size as well.  Miss Brianna is weighing in a 3 lbs 14 oz (give or take half a pound).  She is in the 50 percentile.  I was soooo happy.

So then, I saw the Nurse Practitioner, since my Dr was on call yesterday.  She is wonderful as well, and she came in and was giving us a more in-depth overview of the ultrasound.  She told me everything looks REALLY good.  Also my blood pressure and weight gain was really good as well.  Then when she looked at my chart and realized WHY my Dr. had ordered the ultrasound she was super excited to measure me and see what the results were this time.  I now measure only 5 days ahead of schedule at 32 weeks.  It was interesting though to hear that 2 weeks ago at my 29 week appointment, I was measuring 36 weeks.  My ob never said how far along I was measuring, as she didn’t want me to worry.  But WOW what a difference position makes.

So, we have a totally healthy wonderfully growing baby girl who is right on schedule.  I spoke also with the schedulers for the C-Section, and they asked some preliminary questions, and the told me we WOULD be scheduled for the 30th of December and the time will be determined soon, and then I will get a call with the time and further instructions.  Getting exciting.  Less than 8 weeks until Brianna is here.  So much to do, so little time *sigh*

Getting Behind… On EVERYTHING (An Update on LIFE)

So, as most of you are probably well aware by now, I’m 31 weeks pregnant today.  Just 8 weeks until we get to meet our Miss Brianna.  I feel like the pregnancy and getting ready for baby has been on the back burner the last 2 weeks or so though.  Our life has been turned upside down in the last 2 weeks, however, we are better now because of it.

We have been dealing with behavior issues with Kira for about the last 4 or 5 months now.  Some of the things we knew were just the normal toddler issues, but some… some seemed very disturbing to us.  She was extremely unfocused and had trouble listening, she also had impulsive behaviors that would get her in trouble even though you could tell she didn’t want to do the things she was doing.  We spoke with her pediatrician about her behavior and they sent us a referral to have her evaluated to be seen by therapists.  I was happy someone could give me some insight maybe. 

I waited for a call, and waited… and waited… and played phone tag with the lady from the agency.  I’m not a patient person to begin with, and add all the stress we were going through with Kira and my hormones still being crazy from being pregnant and I was even LESS patient to get things checked out.  I must add here, I have self-control to be nice and considerate to the people from the agency, since I do understand the world doesn’t revolve around me, my family, or my problems… however, to myself (and possibly my family at times) I was very short-tempered just hanging on to hope that they would get in touch with us and set up an appointment soon.

I had a Dr appointment, and after we had to pick up our fur-child from “the sitters” (My father-in-law) and while we were there Kira threw a 30 min fit in Nicks arms kicking and clawing and screaming and crying.  It was then we realized even more, something HAD to be done.  A couple days later we got in touch with the agency and got her info meeting set-up, and they were quick to get us in for an evaluation too.

I had this feeling she wasn’t going to qualify for therapy, and, she didn’t.  The therapists were extremely impressed by everything that she was able to do and how smart she was.  They also told us she was very strong-willed (Um, DUH!!!  That has been part of the issue here… lol).  They were very nice and helpful in giving me suggestions (I’ll share those in another post this week) and I felt like at least part of a solution was in the works, however, we still had the issues with impulsive behavior, aggression, and such to figure out.

After Kira went to bed that night, I started researching diet changes.  Quite a few friends and family members had spoke with us about it being a possible food sensitivity, and after I big gulp and a plea for help from a group on Facebook I recieved THE most amazing advice EVER!!!

It was the day before Halloween and the ladies in the group told me to try cutting out High Fructose Corn Syrup, and Artificial flavors and dyes from her food.  I went into our kitchen and looked through the cabinets and refrigerator to see what I could start feeding her that didn’t have those chemicals on the ingredient list.  I found some cereal, some tortillas and cheese for quesadillas and figured I’d throw together some sloppy joes with canned tomatoes and such for dinner.  We cut out juice and gave her only milk for the day, and Nick even made popcorn for a snack and shared it with her.  I wasn’t at all ready for the EXTREME change that took place that day.

The morning was amazingly smooth.  It didn’t feel like a chore to deal with her, she stayed focused on toys about 4 times as long as she use to, and she even played some WITH me.  When it was nap time, she lead me to her bedroom door, walked into her room and then waited by her crib with her arms up to be picked-up and placed in her crib for her nap.  She slept about 2.5 hours (about 30 minutes to an hour longer than normal).  I was SHOCKED to say the least, and figured our Halloween plans for that night were doomed since we had, had such a good morning, it was sure to go down-hill by the evening.

When she got up from her nap, she was happy, and she spent the rest of the afternoon enjoying the holiday events with her father and myself.  We watched 3 Halloween specials while Nick and I got our pumpkins ready to carve and carved them.  She listened about 90% better than normal.  She even got to color some and get in her Halloween costume to hang out around the house and I was able to get a few pics.  We had 2 tiny meltdowns that day which are to be expected for that age, but they only lasted 5-10 minutes tops and considering all the excitement of the day I was VERY pleasantly surprised.  We ended the evening watching The Great Pumpkin and eating popcorn before Kira’s bedtime.

I had tears in my eyes as Nick put her to bed, we had an awesome holiday with no meltdowns, and I didn’t feel like I had whiplash trying to keep up with our daughter.  It was the most enjoyable day we had had in a while.

Now, I will say when I reported this to the group that helped me figure this out, I was warned that it could be a roller coaster ride for a week or 2 while she is “detoxing”.  We have seen some slight up and down, but overall her behavior over the last 4 days has been MUCH improved from what it was.  We have our sweet, funny, loving little girl back and that makes me so very happy.

So, that is why I have been behind on everything lately.  I will be updating on the pregnancy later this week (after my ob appointment Wednesday).  I am also going to post about our new diet change, and some of Kira’s new schedule we have been working on.  Looking forward to sharing this journey with you all.
